This Easter I wanted to make a dessert that was easy, a little out of the box and of course delicious. I hadn’t made any kind of strawberry cake or cupcakes in years and it’s one of my favorite flavors, so I thought what better time to make it then for Easter! I had seen a cute idea of making bunny ears out of white candy melts and had the idea of making little “flower crowns” around the ears out of sugar flowers! However, I’ve never made sugar flowers and I wanted this tutorial to be beginner friendly for you guys as well. I simply googled sugar flowers and found that Michaels sells a bunch of really cute ones! Not having to make the sugar flowers saves a ton of time and makes these cupcakes beginner friendly.
Another easy hack for making these cupcakes? Use box cake mix. I honestly love box cake mix and many times it turns out better than cake I make from scratch, especially when it comes to strawberry! Basically the only think I made from scratch for this recipe is the vanilla buttercream. I’ll leave all the directions for these bunny cupcakes below. Let me know in the comments if you’ve made them!
Strawberry Bunny Cupcakes:
For the Cupcakes:
Directions: Follow instructions on box for cupcakes. Let cool.
For the Frosting:
- 1 cups salted butter, softened
- 4 cups powdered sugar
- 2 teaspoons vanilla extract
- 2 tablespoons milk
Directions: Whip butter with stand mixer or handheld mixer until light and fluffy. Add sugar in slowly. Then add in vanilla extract. Add in milk until desired consistency is reached. Spread buttercream on cupcakes, creating a dome shape.
For the Decorations:
- 1 bag bright white candy melts
- Wax Paper
- 4 packs of Wilton pastel sugar flowers or sugar flowers of your choice
Directions: Melt Candy Melts as directed on package then place in piping bag. Cut small hole in tip of bag and create bunny ears on sheet of wax paper. Wait 15 min to dry then remove using a sheet of paper or index card. Assemble ears and sugar flowers on cupcakes.
